Unbelievably rich & fabulous chocolate cake

Yes! Another sweet recipe, this time it’s from the wonderful Nicky Francis who owns Shapeshifters Nutrition Management. Nicky also writes for Syrup magazine and is a nutritionist who has created some awesome online weight loss programmes that include lots of yumminess – even chocolate cake! The programs are very personal and easy to use even for an absolute computer novice. Nicky is always on hand to assist or offer helpful advice and tips. Ingredients
60gm butter
500gm dark chocolate
2/3 cup pecan nuts ground
1/3 cup flour
1/3 cup castor sugar
¼ cup water
6 eggs separated
1 Tbsp Cointreau

Method
Melt 40gm butter and 250gm dark chocolate
Add the flour, ground pecans and sugar to the chocolate
Add water, Cointreau and the beaten egg yolks
Beat the egg whites until stiff and fold into the chocolate mix
Pour into greased round tin
Bake at 180˚C for 25-30 minutes until firm. The cake should remain slightly moist on the skewer.
When cooled, melt the remaining chocolate and butter and ice the cake.
Serve size – a slither!
