Bread & Butter Pudding (with croissants)

Well, it’s been awhile but time is finally back on my side so it’s back to blogging! Right now we’re in the midst of winter so what could be more fitting than a sweet, simple, winter pud.

Croissants (4-6)
50 grams sultanas
3 eggs
1 tsp Vanilla essence
600 mls hot milk
Caster sugar
Nutmeg

Whisk together eggs, sugar and vanilla then gradually whisk in hot milk. Grease a pie dish and layer sliced croissants with sultanas. Pour over milk mixture. Sprinkle with caster sugar and ground nutmeg (my grandmother would have grated whole nutmeg). Bake in a water bath at 150 degrees celsius till set. Approx. 30 mins.

I thought next time I would try layering the croissants with sliced apple as well, yum!
