RECIPE: Bacon, apple & spinach salad with blue cheese recipe

Needs no introduction – simple, easy and delish!

200 gm chopped bacon
200 gm apple slices
80 gm baby spinach
80 gm blue cheese crumbled
50 gm toasted walnuts
50 ml olive oil
15 ml cider vinegar
1 tsp grain mustard
Salt & Pepper

Colour off apples slices in a hot pan with a little oil, remove and cool. Add bacon to the same pan, cook until crispy, remove, drain and cool. Add bacon, apple slices, spinach, blue cheese and toasted walnuts to a salad bowl, combine dressing ingredients and mix well then toss through your salad. Season and serve.

RECIPE: Bircher muesli recipe

I was going to post something a bit richer but this is just what I felt like this morning after a late night…

Quantities per person:
1 level tablespoon rolled oats
1 heaped tablespoon raisins or sultanas
4 tablespoons water
1 tablespoon of safflower oil
3 tablespoons natural or greek yoghurt
1 large apple
1 banana
1 tablespoon mixed nuts and seeds (such as almonds, pumpkin seeds, sunflower seeds)
1 tablespoon honey
1 pinch cinnamon (optional)

Soak rolled oats and raisins in water overnight. Add grated or chopped apple, chopped banana or any other fresh seasonal fruit. Add nuts and seeds. Mix, serve and top with your favourite yoghurt and honey.
