Scrummy plum cake

This is a great way to make use of excess plums that you may have at the moment. The cake is light, easy to make and delicious!

In the pic above I pushed my plums into the mix when I didn’t need to as the cake then rose and covered the plums which wasn’t the right look. Nex time I will just sit the plums on the top.

Recipe

250gram butter
1 1/2 cups sugar
4 eggs
1 1/2 cups dessicated coconut
1 1/2 cups flour
1 1/2 tsp baking powder
6-8 fresh plums, halved and stones removed.

Preheat oven to 175°C. Grease and dust a springform tin.

Cream butter and sugar then add eggs one at a time. Sift flour and baking powder then add together with the coconut to the butter – sugar mix.

Pour mixture into your tin and place plums over the surface.

Bake for 1 hour or until a skewer inserted comes out clean. Cool and remove from tin. Slice and enjoy! Great teamed with yoghurt, cream or a lemon syrup poured over the top.
