Mad about Macaroons

These are easy and extremely moorish!

RECIPE

450 grams ground almonds
275 grams icing sugar
zest of two oranges
1 teaspoon almond essence
3 egg whites
1 teaspoon cinnamon

Pre heat oven to 180°C.
Mix together almonds, icing sugar, orange zest, almond essence and cinnamon. In a separate bowl add egg whites, whisking until fluffy then fold them into the almond mix – this mixture will be sticky. Form small balls and place on baking trays. Cook for 20 minutes. Cool on racks. Makes approx. 30 biscuits. Most excellent with freshly brewed coffee! – Ange
