Banana-choc mini cakes

This is based on another Julie Le Clerc recipe and it’s very scrummy, I guarantee these won’t last a day!

3 ripe bananas, mashed
3/4 cup caster sugar
100g butter, melted
1 egg
1 tsp vanilla
2 tbsp milk
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1 1/2 cups dark chocolate buttons

Heat oven to 190°C. In a bowl mix the mashed banana, sugar, melted butter, egg, vanilla and milk.

Sift in the flour, baking powder and baking soda. Stir to just combine.

Allow the mix to cool so the choc buttons don’t melt then stir in the choc buttons.

Spoon into mini-cake cases or muffin trays.

Bake for 25 mins.

Lovely linen

While it may seem lame to write about tea towels, they are essential and these are great – retailing at around NZ$5 each. I got mine from www.culinarycouncil.co.nz.
