I was talking to a friend this morning and she spoke about being inspired by this version of the NZ classic ‘Anchor me’, the meaning behind it is also pretty special down here in the South Pacific so I thought it was time to have another music post in between eating, dreaming and thinking food! I’ve managed to sqeeze in one last post before I head off on my journey. This is a favourite recipe that I’ve made many times, hope you enjoy it as much as I do! And you can all look forward to a bumper Syrup Spring issue with lots of goodness from my trip!

Thai Pumpkin Soup

Thai Pumpkin Soup

1 whole crown pumpkin peeled and cut into chunks
3 Tablespoon Brown sugar
2 onions
1 can coconut cream/milk
4 Tablespoon fish sauce
2 cups good quality vegetable stock
5 fresh kaffir lime leaves
1 lemon grass using the core at the base of stem chopped finely

Place onions and brown sugar in large pot and slightly caramalise add lemongrass.
Place pumpkin into pot with sugar and onion, poor the coconut cream into pot.
Place stock and fish sauce into pot.
Add kaffir lime leaves and boil
Reduce heat and simmer until pumpkin cooks.
Puree or mash.
Add fresh coriander and a dollop of sour cream.
