Award winning dish for Two Small Fish

This stunning creation by chef Trent Clarke of Two Small Fish, Mount Maunganui, was the winner of the ‘Fine Dining’ section in the Plenty of Flavour culinary competition. Local Bay of Plenty ’signature’ dishes were created utilising the best of locally available ingredients.
On the plate above we have Spring Rangiuru lamb rack with baby kumara, Janets figs, avocado ice cream and Ohiwa oysters with jelly. Both Ange and I can confirm that the flavours not only worked but were sensational.
